I was making the kids mac-n-cheese the other day for lunch, and I thought I should blog about how I made it homemade but quick. Usually when one thinks of homemade mac-n-cheese you think long and involved and yes it can be!!! But, it can also be quick and still tasty. Cast of Characters:

pasta kids favorite is the little bags of alphabet pasta that you buy in the hispanic section. I use either that or whole wheat pasta for more nutritional value. You can buy whole wheat alpha-noodles just not anywhere in CS/Bryan that I have found. I use 2 bags for my crew and have some leftover.

1 cup milk

2-4 T of butter ...all depending on if you are pro-fat or anti-fat
2-4 T of flour ...I probably use 3-4
cheese the handful ;-) and sometimes I throw in a spoonful or two of cottage cheese. It melts, has a lot of protein, and they have no clue it is in there...
salt to taste

The play:

Boil your water and throw in your pasta. While your pasta cooks, you are going to make your cheese sauce. It is a good idea to have all your ingredients measured out and ready Well, the flour and milk anyway because you are first going to melt your butter in a saucepan. you do not want it to burn, so as soon as it melts toss in your flour adn whisk it into a paste. When it is nice an pasty, slowly add your milk(this is the one ingredient you do not want to throw or toss) while whisking away. Keep whicking until it gets thick and smooth. Then add your cheese until it looks nice and cheesy...a couple of handfuls. Add a bit of salt. Turn your heat off once it all melts together. When pasta is done, drain it and throw it back in the pot. Pour your cheese sauce on top and mix it all together. I usually taste it and add more cheese if I think it doesn't pass the cheesiness test!!

1) WHERE DID YOU FIND THE PASTA? I've looked in 2 stores already and can't find it.

2) You can sneak in veggies by adding 1/2-1 cup. butternut squash, carrot, or sweet potato puree (think baby food for quick and easy). They won't know it's there and voile, a veg serving. Gotta love "Deceptively Delicious" cookbook!
