Black Bean Brownies

Go back and read the title again if you need to. I read about them on this blog sending me to this one. (Heather, if you read this you'll find the header of the second one interesting so click on it. ;-))
I knew I had to try these and really I think I'd have to call them a success. I don't know as these would become my goto brownie recipe, but everyone like them but Elizabeth who said they tasted like coffee; I left that part out so I dont' know where she got that from. Jon was the only one who tried them that didn't know what was in them and he didn't have a clue there were black beans in them. Jack asked for seconds and thirds and he wouldn't get near a black bean with a 10 ft pole before they appeared in brownies. Here is the recipe in case anyone feels a need to try them. Black Bean Brownies
1 (15.5 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable or canola oil
1/4 cup cocoa powder
1 pinch salt
1/2 teaspoon baking powder
1 teaspoon vanilla extract
3/4 cup white sugar
1 teaspoon instant coffee (optional)
1/2 cup chocolate chips (optional)

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
- Combine the all ingredients (except chocolate chips) in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
- Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes. Yields 16 brownies. (* Let them cool before eating for the best flavor*)
